Quinoa, Chickpea & Blackbean Salad


1 cup raw quinoa (cooked in salted water till soft, drained, fluffed and cooled)

1/2 cup cooked chickpeas

1/2 cup cooked black beans

2 tbsp jalapeño (fine diced)

2 tbsp scallions (chopped)

zest of 1/2 lemon

1/4 cup feta (crumbled)

3 T Bread Bar House vinagrette


Method    Makes 4 typical servings

Combine all ingredients.  
If you would like to pack this recipe for later, leave the vinaigrette on the side until serving
